How to make BBQ mop sauce
The tangy, spiced sauce enhances the flavor of your meat and keeps it from drying out during slow cooking on the grill.
Mop sauce is used while smoking or grilling over wood chips to continuously baste barbecued meat with flavor while it cooks. It helps to keep the meat moist, while allowing flavor to infuse into it while it cooks. The layers of mop sauce combine with the meat rub during cooking, which allows a tasty crust to develop on the outside of the meat.
Mop sauce is quite different from regular BBQ sauce, being much thinner. It is usually based on vinegar, but other cooking liquids such as beer or Worcestershire sauce are also frequently used.

How to make BBQ mop sauce.
Ingredients
- 2 cups apple cider vinegar
- 2 teaspoon brown sugar
- 2 teaspoons BBQ sauce
- 1 teaspoon salt
- 1 teaspoon ground black pepper
Instructions
- Place apple cider vinegar, sugar, BBQ sauce, salt and pepper in a jar with a lid.
- Shake jar until ingredients are will combined.
- Gently mop on to meat every 20 minutes while slow cooking or smoking.
